Innovative Enzyme-Fermented Coffee

Dr. Grant Lee is a Korean-American retired cancer pathologist with extensive experience in cancer prevention research. He earned a PhD from Seoul National University in South Korea and worked at several prestigious institutions, including the Ernest Mario School of Pharmacy at Rutgers University, Yale Medical School, The Hormel Institute - University of Minnesota, Medical Research Center in the USA, the National Institute of Health Sciences (NIHS) in Japan, and the Biomedical Research Institute at Yonsei University College of Medicine in Korea. Through his research, Dr. Lee became well-versed in both the health benefits and potential risks of coffee consumption.

While researching cancer prevention, Lee frequently encountered studies on the effects of coffee, much like his work with anti-cancer ingredients from fruits, vegetables, green tea, and selenium. He observed coffee's long-standing impact on the human diet and recognized its unique allure among beverages, drugs, and foods, especially because of its caffeine content.

After retiring from academia, Lee returned to South Korea and shifted his focus entirely to coffee. He leveraged his scientific expertise to create a healthier coffee. His breakthrough came when he discovered enzyme fermentation, using an enzyme complex from Henna Bio Tech in South Korea. By fermenting green beans with a complex blend of enzymes, he successfully reduced the acid, tannin, and caffeine levels in coffee, creating a brew that was gentler on the digestive system.

Since 2020, Lee launched his DAYYES Coffee brand in Korea. In 2021, he moved his business to Middletown, New York, where he founded the DAYES Coffee Roaster brand and opened a coffee roastery and shop on North Street, Middletown, NY. His business continues to thrive as he expands his work with enzyme-fermented coffee.
