Why Is DAYES Coffee Special?
We’re proud to offer America’s first Enzyme-Fermented Coffee, crafted with enzymes and probiotics for a healthier, delicious coffee experience.

Fermenting Coffee Beans with Enzymes
At DAYES, we start with the finest Grade 1 Arabica coffee beans, carefully treated with probiotics and enzymes—protein molecules naturally found in our digestive system—and fermented at an optimal temperature. Once roasted, ground, and brewed, these fermented beans yield exceptional flavors and unique health benefits not found in regular coffee.

What Are The Benefits Of DAYES Enzyme Fermented Coffee?

Low Acidity
While regular coffee typically has a pH ranging from 4.85 to 5.10, making it acidic, our fermentation process naturally raises the pH to approximately 6.4. Given that a neutral pH is 7, DAYES Coffee is closer to neutral, resulting in a brew that's smoother and gentler on the stomach.
Gentle On The Stomach
Fermentation makes coffee easier to digest and absorb by breaking down tannin and other compounds that can trigger stomach discomfort.
Mycotoxin Free
We utilize in-house mycotoxin testing equipment to examine samples from each batch of our fermented coffee, consistently confirming the absence of these harmful substances. Additionally, independent third-party testing has verified that our coffee is mycotoxin-free.
Freshly Roasted to Order
At DAYES, we roast our enzyme-fermented coffee beans in-house at our Middletown, NY, facility, ensuring freshness by stamping the roasting date on every bag.
Lower Caffeine Content
Dayes Coffee is low in caffeine, as fermentation naturally reduces the caffeine content by 64%, making it a great option for those who want a gentle boost without the jitters while lowering their caffeine intake.
Longer Freshness
Fermentation leads to less rancidity, thereby extending the preservation period of roasted coffee beans up to two years. A longer preservation period allows the taste to become even richer.
Less Bitterness
Fermentation decreases the intense bitter taste of regular coffee. Coffee that tastes smoother and less bitter can be enjoyed any time of the day.

Retired Cancer Pathologist Develops Innovative Enzyme Fermented Coffee
Founder Dr. Grant Lee is a Korean-American retired cancer pathologist with over a decade’s experience in cancer prevention research. Dr. Lee worked at Rutgers School of Pharmacy, Yale Medical School, and Tokyo’s National Institute of Health Sciences. Dr. Lee is well aware of the health benefits of coffee and its potential issues for some consumers.
He returned to South Korea and made coffee his full-time focus, and he used his science background to formulate a coffee that would take health into account first. He obsessively researched and experimented with coffee until the answer hit him: fermentation. By treating the green coffee beans for just a few hours in a complex of 50 enzymes, a reduction in acid, tannins, and caffeine makes a coffee that is finally easier on the gut.

This is my second review after purchasing several bags. We wanted to lower our caffeine intake so we tried this coffee. Now after 6 months, drinking this coffee, the high end coffees in France, Dubai, Michelin star restaurants, and other famous coffee shops. My wife can’t wait to get back home to her Dayes.
Enough said.
Smooth Taste
I love the flavor. It smells so good. I have yet to have a bitter cup! It’s helpful since I have acid reflux.
Simply the Best!
I have Crohn’s disease and I’ve found that Daye’s coffee with its low acid and low caffeine really works well with my digestive disorder.
Best All Around Coffee!
Consistent quality and always roasted to order. Brews well with any method -- best with the Gabi A -- which I was using before I first tried Dayes. Just easy to enjoy with just enough caffeine, no acid, and without being over-roasted or bitter, Finally, a coffee that I can enjoy every day as a part of a healthy lifestyle.
Worth it's weight in gold
I tried Dayes about a year ago and really fell in love with it, but I put off purchasing the family size bag because of the initial cost output even though by weight it's much less expensive than the smaller bags. But my sisters and parents all love to drink coffee every morning, and my dad especially is very particular about strength and flavor with a long standing 'cowboy coffee' type preference. So I was concerned most about winning him over to Dayes. My dad has also struggled with digestive issues, and is (successfully) fighting a colon tumor, so I was hopeful to bring him a healthier option for his beloved morning routine. And to my joy after the first couple tries of learning to brew it he was hooked! He, and I, agree it has a strong satisfying flavor, yet digests better than other, even good quality, coffee bean brands. And the smell when you brew it is heavenly!! It has ruined me for desiring any other kind of coffee but Dayes - and for good reason! We are all so grateful for a healthy AND delicious coffee option. Thank you, thank you!! Highly recommend!
Amazing
It tastes great but it has also had an amazing affect on my blood pressure. I've been on low dose BP med for about a year. My BP has improved but still tends to go up & down. I've been drinking 1 cup of Dayes coffee for 11 days. This morn BP was 103/62 before medication. I decided to not take the med. I will continue to monitor it but so far I'm thinking AMAZING.
